Recipe: Saffron vegetables with couscous<\/span><\/h4>\n

Ingredients:<\/p>\n

  • 1 onion cut very fine<\/li>\n
  • 2 pieces of garlic, cut very fine<\/li>\n
  • 0.25g saffron threads Tip: Crush the threads in a mortar and place in warm water for a few minutes.<\/li>\n
  • 1 red pepper, cut into strips<\/li>\n
  • 1 yellow pepper, cut into strips<\/li>\n
  • 1 courgette, cut into slices<\/li>\n
  • 1 aubergine, cut into cubes<\/li>\n
  • 400 g tomatoes, chopped<\/li>\n
  • 1 cup vegetable stock<\/li>\n
  • 1 cup couscous<\/li>\n
  • Salt and pepper<\/li>\n
  • Olive oil<\/li>\n<\/ul>\n

    Instructions:<\/p>\n

    1. Heat the olive oil in a large pan and saut\u00e9 the onion and garlic until soft.<\/li>\n
    2. Add the saffron and stir well.<\/li>\n
    3. Add the peppers, courgette and aubergine and fry for about 5 minutes until soft.<\/li>\n
    4. Add the chopped tomatoes and vegetable stock and bring to the boil. Add salt and pepper to taste, cover and simmer for about 20 minutes.<\/li>\n
    5. Meanwhile, prepare the couscous according to the packet instructions.<\/li>\n
