Festive shortbread gluten-free
150g soft butter. 120g powdered sugar. 2TL vaniglia sugar. 1 egg. 70g grinded almonds. 250g flour (buckwheat and chickpea mixed)
Cool dough for an hour. Form little biscuits. Bake at 180 for 8 min.
Safran cookies glutenfree
125g soft butter, 200g cane sugar, 1 egg, pinch of salt, 0.3-0.5g saffron (very intense), 1 teaspoon baking powder, 250g chickpeas and buckwheat flour mixed (or rice/corn flour).
Cool dough. Form little balls. Bake at 200 for 7-10 min.
Savory oregano cookies glutenfree
125 chickpea and buckwheat flour, 50g cream cheese, 1 egg yolk, 50 butter, salt, oregano
Mix dough. Cool dough. Form little balls and then coin shapes. Bake at 180 for 10-12 min.
