Il Cerqueto Red Lentils

Rezept:Curry with red lentils and spinach

Ingredients:

• 1 cup of red lentils
• 3 cups of water
• 1 onion hacked
• 2 pieces of garlic, hacked
• 2 spoons of olive oil
• 1 teaspoon of kumin
• 1 teaspoon curcuma
• 1 teaspoon red pepper powder
• 1 teaspoon grinded coriander
• 1 tin of tomates
• 4 cups of fresh spinach, hacked in larger pieces
• Juice of one lemon
• Salt and pepper

Recipe:

1. Wash lentils in a sieve.
2. Heat olive oil in a pot, fry onions and garlic until they are soft.
3. Add the spices and fry for another 2 minutes to develop full flavour.
4. Add lentils into the pot, stir and cover them with the onion mix.
5. Add the hacked tomatoes and the water, cook gently at medium temperature, until the lentils are soft and have soaked up all water (about 20-25 minutes).
6. As soon as the lentis are soft, add the spinach and let it collaps.
7. Add lemon, salt and pepper.
8. Serve hot with rice or flatbread. Enjoy!
