Recipe: Saffron vegetables with couscous
Ingredients:
- 1 onion cut very fine
- 2 pieces of garlic, cut very fine
- 0.25g saffron threads Tip: Crush the threads in a mortar and place in warm water for a few minutes.
- 1 red pepper, cut into strips
- 1 yellow pepper, cut into strips
- 1 courgette, cut into slices
- 1 aubergine, cut into cubes
- 400 g tomatoes, chopped
- 1 cup vegetable stock
- 1 cup couscous
- Salt and pepper
- Olive oil
Instructions:
- Heat the olive oil in a large pan and sauté the onion and garlic until soft.
- Add the saffron and stir well.
- Add the peppers, courgette and aubergine and fry for about 5 minutes until soft.
- Add the chopped tomatoes and vegetable stock and bring to the boil. Add salt and pepper to taste, cover and simmer for about 20 minutes.
- Meanwhile, prepare the couscous according to the packet instructions.
- Serve the vegetables with the couscous and enjoy.
