During the years, Claudio and his team have specialised increasingly in cultivation and processing of antique grain and legumes. With passion, the team takes care of the entire process from the moment the seeds are touching the carefully prepared soil to the pasta on your plate.

You will notice, that the flower made of antique grains rises a bit less, and that the structure differs slightly, but it is much better tolerated by our digestive system.

For the production of the flower, the grain is being stone milled fresh every day. In that way all nutritions are maintained. First the whole grain is milled, then the flower is sifted in order to obtain different shares of whole grain and to maintain taste and organic structure.

All our pasta is home made out of our stone milled grain. This is why we have different sorts of pasta following the season. The pasta is being prepared with love and all by hand, afterwards giving it time to dry at low temperature.

The grains are being cleaned and pealed carefully by hand and with mechanical tools, in order to maintain the full character and quality of the product. Also the legumes are being cleaned carefully by hand and with mechanical tools.
