Recipe: Saffron vegetables with couscous

Ingredients:

  • 1 onion cut very fine
  • 2 pieces of garlic, cut very fine
  • 0.25g saffron threads Tip: Crush the threads in a mortar and place in warm water for a few minutes.
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 courgette, cut into slices
  • 1 aubergine, cut into cubes
  • 400 g tomatoes, chopped
  • 1 cup vegetable stock
  • 1 cup couscous
  • Salt and pepper
  • Olive oil

Instructions:

  1. Heat the olive oil in a large pan and sauté the onion and garlic until soft.
  2. Add the saffron and stir well.
  3. Add the peppers, courgette and aubergine and fry for about 5 minutes until soft.
  4. Add the chopped tomatoes and vegetable stock and bring to the boil. Add salt and pepper to taste, cover and simmer for about 20 minutes.
  5. Meanwhile, prepare the couscous according to the packet instructions.
  6. Serve the vegetables with the couscous and enjoy.
